Cooking with Bruce

Bruce is a great cook and the following is one of his favourites



FRESH SPRING ROLLS



Ingredients

1/2 kilo Pork Fillet


1 Carrot
1 bunch Spring Onions
2 small Cucumbers

1 handful of Bean Sprouts

6 large Garlic cloves
1 Lime






1/2 kilo Rice Noodles










Soya Sauce

Sugar Syrup


1 Packet Rice Paper














Stir fry the pork and garlic together in a little oil












When brown take off heat & keep to one side
Add pinch of salt to Bean Sprouts & stir fry
Add Rice Noodles and continue to stir fry together till soft - approx. 2-3 minutes


Dice Carrot into match sticks

Chop Cucumbers & Spring Onions into lengths











Dice Pork into strips

Add cooked Garlic to Rice Noodles & mix together

Take a sheet of rice paper & dip into warm water

Spread sheet on board and add -
The Strips of pork
The Rice noodles with garlic

A couple of sprigs of Mint
The strips of Carrot, spring onion and Bean sprouts









How to roll:
1. Take each side of the rice paper wrapper and fold over the filling.










2. Fold the bottom of the wrapper up over the filling & gently press

down.










3. Continue by rolling the wrapper towards the top.

You now have a fresh spring roll.


This recipe makes 20 Spring Rolls in total








These are now ready to eat with dipping sauce



Enjoy!


SWEET CHILI DIPPING SAUCE

4 tablespoons Soya Sauce

8 tablespoons Sugar Syrup
6 tablespoons Mineral Water

4 Red Chillies (depending on taste!)

2 Tablespoons Lime Juice

2 tablespoons crushed peanuts






Cook Soya Sauce & Sugar Syrup together with a little mineral water till boiling

Continue to simmer for 3 minutes

Add lime juice and the chillies, finely chopped


When ready to serve add crushed peanuts to the sauce
